Notes

To enhance flavor, bloom spices (chili powder, cumin, paprika) by toasting them in a dry skillet for 30-60 seconds until fragrant. Variations include adding diced avocado, crumbled cotija or cheddar cheese, fresh cilantro, or smoked paprika and chipotle for smoky heat. Store in an airtight container in the refrigerator for up to 4 days, noting flavors improve overnight. For meal prep, add pepitas and avocado just before serving. Serve on its own, in a sandwich, wrap, over greens, or with crackers/chips.
